The Gilfeather Turnip is Vermont’s celebrated state vegetable. It was recently covered on Vermont Public Radio’s VPR Cafe program by Ric Cengeri and his guest, Melissa Pasanen, the Food Editor for Vermont Life magazine. The piece is wonderful to listen to and, at the tail end of it, Lini Mazumdar’s Indian Tiffins are highlighted. One of her special Tiffin recipes includes curried gilfeather turnip, winter squash, kale and spices of white and black mustard seed, cumin, ginger and chili.
